  • 3 medium-sized organic eggplants

  • ˝ pack Neufchatel cheese

  • 1 clove garlic crushed
  • A: HBAB: HBB: NO: HB
  • 1 onion
  • A: HBAB: NB: NO: HB
  • Fresh herbs
  • A: UAB: UB: UO: U
  • juice of one lemon
  • A: HBAB: HBB: NO: N
  • pinch of salt
  • A: NAB: NB: NO: N
  • 1 tsp maple syrup
  • A: NAB: NB: NO: N

    Procedure: Bake the eggplants until very mushy. Sauté the onion until golden. Blend the eggplants with the Neufchatel, garlic, and the onion. Add whatever herbs are handy. Mix in the syrup and the lemon juice. of one small lemon.

    Shortly before I discovered ER, I spent a couple of weeks in Jerusalem and got thoroughly addicted to many eggplant-based dishes popular there. Eggplant hummus was my favorite... but now it's, bye sesame... and hello Neufchatel cheese to replace it!
