Mix the cheeses and spices together in a bowl.
Roll the eggplant slices into small tubes and fill them with the cheese mixture. Place the rolls in a baking dish. Cover with the red pepper sauce and bake at 350 degrees F. until hot, but not too much or they will lose their shape..
