When using soy cheese on a pizza, especially a low-fat variety, put an empty metal pie pan (use one you don't care too much about the looks
of) on the rack beneath your pizza and cook the pizza shell and the empty pan for about 12 minutes first with
no cheese. Then take the pizza out, sprinkle your cheese on it (plus any other toppings), put it back in, and pour 1/2 cup of water into the hot
empty pan. Shut the door and continue cooking until the cheese melts.
This damp-oven technique makes soy cheese melt in a much nicer way.
