In a large pot, boil soybeans in salted water for 5 minutes. While
the soybeans are boiling, make a large bowl of water, sea salt and
lemon juice. I use LOTS of salt and a generous amount of lemon juice.
Basically, it tastes like lemony sea water. After the soybeans have
boiled, I transfer them to the bowl (drain the boiling water first),
and let them soak in the lemon/salt water in the refrigerator for
several hours. Usually I'll make these in the morning, so that by
dinner time, they're ready. Just drain off the salt water and stick
them in front of your family. They'll be gone in a matter of minutes.
They make a great snack, appetizer or even a main course (which is
usually what happens when I put them in front of Jim).
